Pesto, Tomato, & Mozzarella Baked Chicken

Very quick prep! 4 main ingredients. The rest go on in a dash. Cook up some angel hair pasta and toss it in the juices with some marinara for a delicious side!

  1. 4 each boneless, skinless, chicken breasts
  2. 3 1/2 oz basil pesto
  3. 4 each Roma tomatoes, sliced
  4. 8 oz fresh mozzarella, sliced
  5. dash salt
  6. dash black pepper
  7. dash parmesan cheese, shredded
  8. dash Italian seasoning

  1. Add Photo

    Preheat oven to 400°F

  2. Add Photo

    Lightly coat a baking dish with EVOO

  3. Change

    Place chicken breasts in dish

  4. Change

    Spoon basil pesto on each chicken breast

  5. Change

    Spread to coat top of breasts

  6. Change

    Place tomato slices on top and sprinkle with salt and pepper

  7. Change

    Place slices of mozzarella on top of tomatoes

  8. Change

    Sprinkle with Italian seasoning and parmesan cheese

  9. Add Photo

    Bake for 40 minutes

  10. Change

    Remove from oven

  11. Change

    Plate and enjoy with salad or fresh bread
