Quinoa Fried “Rice”

This dish is so satisfying and filling. It makes 2-3 large servings or 4 side dish portions. I sometimes use butter instead of olive oil which gives it a nice buttery taste. And if I want more substance, I mix in Chinese sausages, luncheon meat (spam) or even weiners.

Ingredients

2-4 Servings
  1. 1 cup quinoa uncooked
  2. 1 tbsp olive oil
  3. 3 cloves garlic, minced
  4. 1 small onion, diced
  5. 1 cup frozen mixed vegetables
  6. 2-4 tbsp soy sauce
  7. 2 eggs
  8. to taste Salt and pepper

Cooking Instructions

    Cook quinoa according to package directions. You can use 1 cup of chicken broth in place of water for added flavour.

    Heat oil in large pan over med high heat. Add onion and garlic and sauté until onions are soft.

    Add vegetables, quinoa, & soy sauce to pan and mix well.

    Create a well in the centre of the pan and crack the eggs in the middle. Scramble the eggs then mix with quinoa. Add salt and pepper to taste. Enjoy!
