Banana Maple Oat Mini-Muffins

Ingredients

  1. 3 medium banana, over ripe
  2. 2 tsp vanilla extract
  3. 1 stick butter, melted
  4. 2/3 cup brown sugar
  5. 1/3 cup maple syrup
  6. 1 cup skim milk
  7. 1 tsp salt
  8. 1 1/2 tbsp baking powder
  9. 1 1/4 cup rolled oats
  10. 1 1/4 cup white whole wheat flour

Cooking Instructions

    Preheat oven to 400°F.

    In standing mixer, mash bananas.

  3. 3

    Mix in, on low speed, all wet ingredients and brown sugar.

    Mix in dry ingredients slowly.

  5. 5

    Line mini muffin pan, fill to tops of liner with batter.

    Drizzle with additional brown sugar, maple syrup, oats and/or thin banana slices. This step is optional but I did this and it turned out great.

    Bake for 18-20 minutes until edges lightly golden brown.
