Cranberry Christmas Cake

Ingredients

  1. 3 eggs
  2. 1 cup sugar
  3. 3/4 cup softened butter
  4. 1 tsp vanilla
  5. 1 Tbs fresh orange zest
  6. 2 cups AP flour
  7. 12 oz fresh cranberries

Cooking Instructions

    Preheat oven to 350°

    With electric mixer, beat eggs and sugar for 7 minutes, until doubled in size (very important since there is no levening agent in this recipe)

    Add butter, vanilla and zest

  4. 4

    Mix 2 minutes

  5. 5

    Fold in flour until about half mixed

  6. 6

    Gently fold in cranberries

  7. 7

    Pour into greased 9x13 pan

    Bake 40-45 minutes

    Cool completely before cutting

Started cooking/baking with Gram just as soon as I was old enough to stand in a chair, with her apron tied around my chest. Made my first solo Thanksgiving meal at age 8. Putting a new flair on classic nothern New England style cooking.
