Hawaiian Rice Salad

Ingredients

5 cup Basmati Rice or Long grain rice.

10 cup Vegetable stock

2 1/2 tsp tumeric powder

1 1/4 cup Almonds slice ( Toasted)

2 1/2 cup fresh Mangoes chunks

3 3/4 cup fresh pineapple chunks

1 2/3 cup Raisins
-
2 1/2 cup Cucumbers, chopped

2 1/2 stalks celery ,chopped

3 cup shredded coconut
Cooking Instructions

For the dressing

1cup and 4 tablespoons lemon juice

1 cup honey

10 tablespoons pineapple juice

5 gloves garlic chopped

salt to taste

black. pepper to taste

wash rice thoroughly

In a pan , bring stock and tumaric powder to a boil.

add rice.

Simmer until rice is cooked.

spread on try to cool.

Whisk dressing ingredients together in a large bowl.

Taste and adjust seasoning.

In a bowl, mix rice with pineapple, mango,almonds black raisins, cucumber and celery.

Gently fold in the dressing.
