Hawaiian Rice Salad

Ingredients

20 servings
  1. 5 cup Basmati Rice or Long grain rice.
  2. 10 cup Vegetable stock
  3. 2 1/2 tsp tumeric powder
  4. 1 1/4 cup Almonds slice ( Toasted)
  5. 2 1/2 cup fresh Mangoes chunks
  6. 3 3/4 cup fresh pineapple chunks
  7. 1 2/3 cup Raisins
  8. 2 1/2 cup Cucumbers, chopped
  9. 2 1/2 stalks celery ,chopped
  10. 3 cup shredded coconut

Cooking Instructions

    For the dressing

    1cup and 4 tablespoons lemon juice

    1 cup honey

  4. 4

    10 tablespoons pineapple juice

    5 gloves garlic chopped

  6. 6

    salt to taste

    black. pepper to taste

    wash rice thoroughly

  9. 9

    In a pan , bring stock and tumaric powder to a boil.

    add rice.

    Simmer until rice is cooked.

    spread on try to cool.

    Whisk dressing ingredients together in a large bowl.

    Taste and adjust seasoning.

    In a bowl, mix rice with pineapple, mango,almonds black raisins, cucumber and celery.

    Gently fold in the dressing.

    Garnish almonds and coconut
