Cod with quinoa salad

Quick, simple and healthy lunch

  1. 2 fillets of cod
  2. 150 g quinoa
  3. handful baby spinach
  4. handful cherry tomatoes
  5. 2 spoons olive oil
  6. salt, pepper and ground cumin


20 minutes
  1. Cook cod fillets seasoned with salt, pepper and ground cumin on a pan in water for 15 minutes or until cooked.

  2. Cook quinoa in water according to the instructions.

  3. Mix chopped baby spinach with cherry tomatoes and cooked quinoa and season with salt and pepper. Sprinkle with olive oil.

  4. Enjoy!
