Microwave Steamed Shrimp/Fish in Lemon Butter Sauce

Ingredients

  1. 1/2 lb shrimp..peeled and deveined
  2. 2 tbsp olive oil
  3. 2 tbsp butter
  4. 2 tbsp lemon juice
  5. 1/2 tsp minced garlic
  6. 1 tbsp chopped parsley
  7. 2 fish filets
  8. to taste salt and pepper

Cooking Instructions

    Mix oil, butter, lemon juice and garlic on bottom of steamer.

    Place tray on top. Season shrimp/fish with salt and pepper.

    Lock lid, open vent and cook 3-4 mins.

    Carefully remove and stir the sauce. Pour over the shrimp/fish. Sprinkle with parsley.

    If you like, serve with simple tartar sauce and shrimp sauce: For tartar sauce mix a little mayo, ketchup, relish and lemon juice. For the shrimp sauce mix a little ketchup with some horseradish.

Am an Army Vet who served as a cook for 8 years. Went to the Persian Gulf and spent 2 years in Seoul Korea. Have been a widow for 3 yrs, so don't really get to cook as much as I would like to. Now about the only time I get to "shine" in the kitchen, is when we have something at the local VFW Post. As you can see, I have 2 boys who keep me company and take up much of time.
