John's Chicken Mole

I've tried at least 6 different chicken mole from various cooks So I created my own version. Everyone LOVES this Mole!

  1. 1 box Dona Maria mole 19.4 oz
  2. 1 small onion, chopped
  3. 6 medium Red potatoes
  4. 3 large carrots
  5. 2 tbsp sugar
  6. 1 tbsp chicken bullion (to taste)
  7. 1/2 cup white wash (water & flour)
  8. 3 lb chicken breast

  1. Add Photo

    Boil the chicken in water until 1/2 way cookd reserving 2 cups of the stock.

    in a very heavy pad or Dutch oven saute the onion until transparent add the stock the mole sauce, chicken, potatoes, carrots and simmer until the potatoes are done

  3. Add Photo

    Once the potatoes are done, remove everything from the sauce and set aside now thicken up the sauce with the white wash until it's the consistency of gravy, then put everything bach in the sauce.

  4. Change

    Serve over steamed rice. Warm corn tortillas go great with this.
