Achari Paneer Quinoa Khichadi

This delicious, super-healthy quinoa khichadi is a great meal-in-one; it makes an ideal vegetarian option at the dinner table.

  1. 3/4 Cup Quinoa, Soaked Overnight
  2. 1/4 Cup Split Skinless Moong Dal
  3. 2 Tbsp Ghee
  4. 1 Tsp Cumin Seeds
  5. 1 Pinch Asafoetida
  6. 1 Green Chilli
  7. 1/2 Tsp Grated Ginger
  8. 1/4 Tsp Turmeric Powder
  9. 1 Tsp Salt
  10. 1/2 Cup Chopped Carrot
  11. 1/2 Cup Chopped Cabbage
  12. 1/4 Cup Chopped Coriander
  13. 400 Gm Paneer
  14. 3 Tbsp Mustard Oil
  15. 1 Tbsp Achari Masala
  16. 1 Tsp Ginger Garlic Paste
  17. 1 Tsp Lemon Juice
  18. 1/2 Tsp Salt

Steps

30 minutes
  1. Cut paneer slab in 1cm thick slices.

  2. In a bowl mix mustard oil, achari masala, ginger garlic paste, lemon juice and salt.

  3. Gently massage paneer slices with this achari mixture and allow it to sit for minimum 2 hours.

  4. Wash soaked quinoa and moong dal 2-3 times with clean water.

  5. In a pressure cooker, heat ghee. Add cumin seeds, asafoetida, green chilli, grated ginger and turmeric.

  6. Add quinoa, moong dal, chopped carrot, cabbage and salt along with 3 1/3 cups water.

  7. Pressure cook for 4-5 whistles.

  8. Heat a non-stick pan. Brush with oil. Place paneer slices and cook for 30 seconds on both sides.

  9. To serve, arrange paneer slices such that it forms a well shape. Pour quinoa khichadi inside the well and garnish with chopped coriander.
