Mini Pig Spiced Pumpkin Latte Smoothie {VEGAN}

Ingredients

  1. 1 cup pumpkin puree
  2. 3/4 cup water
  3. 1/2 cup crushed ice
  4. 3 tablespoons coconut meat
  5. 1 heaping tablespoon peanut butter
  6. 1/2 teaspoon ground pumpkin pie s
  7. 1 can coconut cream or full-fat coconut milk

    Place all of the smoothie ingredients into a blender and run until smooth.For the whipped cream, remove your can of coconut cream or milk from the refrigerator and carefully open it, trying to avoid shaking it. Scoop the top portion of the can into a chilled bowl and discard the liquid (or save it for smoothies, etc.). Use a hand or standing mixer to whip the coconut cream until fluffy.Pour the smoothie into two cups or bowls, then scoop or pipe on the whipped coconut cream.
