Ingredients

2-3 servings
  1. 100 gms boneless chicken shredded
  2. 1/2 cup Quinoa
  3. 1 Onion thinly sliced
  4. 3 garlic chopped
  5. 1/4 tsp dried basil
  6. 1/4 tsp dried thyme
  7. 1 carrot sliced
  8. 1/2 cup Broccoli florets
  9. 3 tbsps coriander stalks chopped
  10. 1 tbsp Lemon juice
  11. 1 tsp cracked peppercorns
  12. to taste Salt
  13. 3 cups water or as required
  14. 1 tbsp oil
  15. 2 tbsps chopped coriander leaves

25-30 mins
  1. Wash the quinoa for 3-4 times in water and keep aside.

  2. Heat oil in a pan. Add the onion, garlic, dried basil, thyme, coriander stalks, season with salt and saute for 2 mins.

  3. Add the washed quinoa and saute for 2-3 mins. Add water as required and cook for about 15 mins.

  4. Add the shredded chicken and cook for 5-7 mins.

  5. Adjust the consistency by adding water if required and add the carrot and broccoli and cook for 3-5 mins.

  6. Add chopped coriander leaves, cracked peppercorns, lemon juice and season with salt and take off the heat.

  7. Garnish with few chopped coriander leaves and serve.
