Ingredients

  1. 1/2 cup Quinoa
  2. 1/4 cup chopped multi colored bell peppers
  3. 1/2 cup Broccoli florets
  4. 1 small carrot sliced
  5. 1/4 cup chopped Cucumber
  6. 2 iceberg lettuce roughly chopped
  7. 1 onion chopped
  8. 2 tbsps Pomegranate arils
  9. Few black grapes for garnish
  10. to taste Salt
  11. 1 tbsp oil
  12. 1 tbsp Lemon juice
  13. Water as required
  14. 2-3 tbsps chopped coriander leaves
  15. 3 garlic cloves sliced

Cooking Instructions

    Wash the quinoa 3-4 times in water and cook for about 15 mins. It should not be mushy and over cooked.

    Drain the water nicely from the quinoa using a strainer. Keep aside.

    Heat oil in a pan. Add the onion, garlic, chopped bell peppers, broccoli, carrot, season with salt and toss for 2-3 mins on high heat.

    In a mixing bowl add the tossed veggies, quinoa and the remaining ingredients and mix well.

    Garnish with chopped coriander leaves, Pomegranate arils, black grapes and serve.
