Quinoa Salad

Ingredients

1/2 cup Quinoa

1/4 cup chopped multi colored bell peppers

1/2 cup Broccoli florets
-
1 small carrot sliced
-
1/4 cup chopped Cucumber
-
2 iceberg lettuce roughly chopped

1 onion chopped
-
2 tbsps Pomegranate arils
-
Few black grapes for garnish

to taste Salt

1 tbsp oil
-
1 tbsp Lemon juice
-
Water as required

2-3 tbsps chopped coriander leaves

3 garlic cloves sliced
Cooking Instructions

Wash the quinoa 3-4 times in water and cook for about 15 mins. It should not be mushy and over cooked.

Drain the water nicely from the quinoa using a strainer. Keep aside.

Heat oil in a pan. Add the onion, garlic, chopped bell peppers, broccoli, carrot, season with salt and toss for 2-3 mins on high heat.

In a mixing bowl add the tossed veggies, quinoa and the remaining ingredients and mix well.

Garnish with chopped coriander leaves, Pomegranate arils, black grapes and serve.
