Salmon roast in butter, lemon and coriander

Ingredients

2 servings
  1. 1 knob butter
  2. 1 lemon
  3. 6 sprigs coriander
  4. Salt and pepper

Cooking Instructions

    Heat the oven to 190• and put the roasting dish in the oven with a knob of butter and salt. When the butter has melted take the dish out put the salmon fillets in and put some sprigs of coriander and lemon slices on top

    Turn fillets over and do the same on the other side. Put them in the oven and leave to roast for 35 minutes

    Add a spoonful of virgin olive oil and some black pepper. Serve with greens and enjoy with a glass of cold crisp white wine 🥂😊

Born in the UK. Came to Spain on finishing Uni many many moons and meals ago, and I'm still here. For me cooking is a great way to unwind at the end of the day. I don't usually have much time my recipes tend to be quite quick and simple and (mostly!!) healthy too. Also quite seasonal because I prefer buying fresh local produce as much as possible.
