Quinoa Patties

Ingredients

  1. 2 cup Quinoa
  2. 3 Eggs, beaten
  3. 10 oz Frozen spinach, thawed and well drained
  4. 1/3 cup Crumbled feta
  5. 2 tbsp Chopped chives
  6. 3 tsp Salt, divided
  7. 3 tbsp Olive oil, divided
  8. 1 pints Grape tomatoes, halved
  9. 1 English cucumber, chopped into half moons (2 cups)
  10. 1 cup Baby arugula

Method

  1. Blank step
    Add Photo

    In lg bowl, stir together quinoa, eggs, spinach, feta, chives, and 1/4 tsp salt. Form quinoa mixture into 8 patties. In lg nonstick skillet cook 4 patties in 1 tbs hot oil over med high heat until golden brown on ea side, about 6 min total. Repeat.

    In med bowl combine tomatoes, cucumber, , arugula, 1 tbs oil, and 1/8 salt.
