Pumpkin & Vege Sausage Pasta

  1. 300 grams Pumpkin, small cubes
  2. 1 cup Wholemeal pasta
  3. 1/2 cup Cherry tomatoes
  4. 1 as needed Basil
  5. 1 tbsp Olive oil
  6. 2 Vegetarian sausages

  1. Add Photo

    Bake pumpkin and vegetarian sausages in oven at 180C for 20 minutes. Whilst in oven, cook pasta for 10minutes until al dente.

    Drain water from pasta and add pumpkin and olive oil to the pot (with salt if you want). Shake with lid on until pumpkin has mashed up a bit - this works as a kind of sauce. Slice the sausages and add to pot with tomatoes. Cool to room temp before adding basil.

    You can replace the vegetarian sausages for regular ones just note this will have a higher calorie and fat content than the nutritional data I provided :)
