Lettuceless Greek Salad

Ingredients

4 servings
  1. 3 Ripe Tomatoes
  2. 1 English Cucumber
  3. 1/2 Red Onion
  4. 2/3 Cup Greek Feta Crumbled
  5. 1/2 Cup Kalamata Olives
  6. Dressing
  7. 4 Tbsp Olive Oil
  8. 2 Tbsp Lemon Juice
  9. 1 Clove Garlic. Finely chopped
  10. 1 Tbsp Oregano
  11. Salt an pepper to taste

Cooking Instructions

    First we quarter all of the tomatoes. Then I like to cut each quarter into threes. Place into a large bowl.

    Next the cucumber. I like to slice this and then quarter all the slices. Makes it easier to eat. Add to the bowl.

    Once thats all done we move on to the onion. Slice this as well and the quarter all the slices.

    One of the most important ingrediants to this dish is the Feta. I like using Greek feta. I find that it tastes better. Your going to want to start by cutting the feta into 1 cent. slices and then crumble them into the bowl as well.

    I use about 1/2 a cup of kalamata olives in this salad. I love this olives so much. I use the ones with the pits. I find that they have a better flavor then the cut ones.

    For the dressing i use my good olive oil, mix that with your lemon juice, garlic, oregano and lastly your salt and pepper. Put all of this in a closeable container and shake it for about 15 seconds.

    Add your dressing to the bowl and toss this until all of your veg is covered and enjoy.

I have always loved cooking. At a young age my love for this art began as I watched my grandmother cook and prepare meals for everyone in the house. I'm told she was the first female certified chef in ontario. From there, it was a culinary adventure every sunday in my house as i watched, and helped my parents make most of our meals that day. As an adult, I try to invent and create fresh and wholesome meals in my kitchen daily.
