Pineapple fried rice

Pineapple fried rice is very flavorful , easy and quick dish that is liked by my family or guest in breakfast. If you have some leftover rice and pineapple then this delicious dish can be made within few minutes.
Ingredients

2 cups cooked rice

1 small carrot cut into small cubes

1 small cucumber de seeded and cut into cubes

1 fresh red chilli chopped

1 fresh green chilli chopped
-
2-3 garlic pods crushed
-
3-4 string of spring onion

1 tsp roasted sesame seeds
-
to taste Salt

2 tbsp cooking oil
-
1 tsp soya sauce
-
1/2 tsp white vinegar
Cooking Instructions

Heat oil in a broad non stick pan. Add chopped white part of the spring onion and saute till translucent.

Add crushed garlic. Saute for few seconds.

Add pineapple pieces and other veggies.

Stir and cook in high heat. Add chopped chillies.

After 3-4 minutes, add the cooked rice and mix well.

Add soya sauce, salt,vinegar and crushed black pepper.

Stir continuously to mix everything very well.

At last add sesame seeds, check seasoning and remove from heat.

Serve in the cleaned pineapple shell and enjoy hot.
