Blue Lamb Burger



  1. 5 lbs. ground lamb
  2. 1/4 cup cumin seeds (toasted)
  3. 2 Tbl. coriander
  4. 2 medium yellow onions
  5. 1 bunch sage
  6. 1 bunch mint
  7. 4 sprigs rosemary
  8. maytag blue cheese (for garnish)
  9. arugula (for garnish)
  10. tzatiki
  11. 1 Tbls. salt
  12. 1 Tbls. white pepper
  13. brioche burger buns
  14. 3 eggs
  15. 2 cups plain bread crumbs

    Chop rosemary, mint, sage.

    Dice onion, sautee until tender

    Add chopped herbs, onion, salt, pepper, cumin seeds, and coriander to ground lamb . Mix until well combined.

    Add eggs and bread crumbs. Mix until combined.

    Form burger patties

    Cook to desired temp on grill or flat top which ever preferred.
