My little monkey is turning one and what better way to celebrate then with a special monkey cake! This simple Victoria sponge was perfectly quick to whip up during Eddie's daytime nap. (The decoration took a little longer!).

Ingredients

  1. 200 g softened butter
  2. 200 g caster sugar
  3. 1 TSP baking power
  4. 4 eggs
  5. 2 tbsp milk
  6. Decoration
  7. Ready to roll icing
  8. Decorations to suit
  9. 200 g double cream

Cooking Instructions

    Mix all of the cake ingredients together in a bowl

    Butter your baking tin and pour the mixture in evenly

  3. 3

    Pop in the oven at 190C for 20 minutes, until golden brown

  4. 4

    Let the cake cool.

  5. 5

    Add the chocolate and double cream in a bowl and heat for 30 seconds. Stir and heat for another 30 seconds. Stir and then let cool until it is a thick paste.

    Add the mixture to the top of the cake, ideal for a drip effect. Once nearly dry, add your final decorations.
