Mug cake (pineapple sponge)

  1. 2 tablespoons soft butter
  2. 1 medium egg
  3. 2 tablespoons semi-skimmed milk
  4. 1 teaspoon vanilla extract
  5. 3 tablespoons caster sugar
  6. 4 tablespoons self-raising flour
  7. pinch salt
  8. 1 tablespoon pineapple jam

  1. Place the butter in a 350ml mug and microwave for 10-20 seconds until melted

  2. Add the egg, milk and vanilla to the mug and beat in with a fork until combined. Add the sugar, flour and salt and beat again until smooth.

  3. Cook in the microwave for 1 minute 25 seconds @600W, 1 minute 15 seconds @800W or 1 minute 5 seconds @1000W. Leave to cool.

  4. Spoon the jam over the cake. Ready to serve!
