Traditional Ful Medames

Prepared with fava beans, garlic and olive oil, this popular Egyptian appetizer has gone global.

Ingredients

  1. 2 cups canned fava beans
  2. 4 cloves garlic, crushed
  3. 8 tablespoons lemon juice
  4. 1/2 cup olive oil
  5. 1/2 teaspoon salt
  6. 1/2 teaspoon cumin
  7. For garnishing:
  8. 1/2 bunch parsley, finely chopped

    Drain and wash the beans, then heat them in a large pan with some water.

    Once hot, transfer the beans along with the water into a medium bowl and mash slightly with a fork.

    In another bowl, mix the garlic, lemon juice and olive oil with salt and cumin. Pour the dressing over the fava beans and mix well.

    Garnish with chopped parsley if desired.
