Sfouf, my Mom's Way

Sfouf is the Lebanese ultimate coffe cake. The saffron gives it its special color and texture.

  1. 5 cups flour
  2. 2 cups sugar
  3. 1 cup vegetable oil
  4. 1 1/2 cups water
  5. 2 teaspoons baking powder
  6. 1/2 teaspoon baking soda
  7. 2 teaspoons turmeric powder
  8. 1 tablespoon aniseed powder
  9. 1 teaspoon mahlab, if available
  10. 1 teaspoon tahini, sesame paste
  11. For garnishing:
  12. 10 almonds, cut in halves

  1. Add Photo

    Preheat the oven to medium heat.

  2. Add Photo

    In a bowl, mix all the ingredients together, except the water and the tahini paste. Mix well.

    Add gradually the water while kneading until you get a medium/soft batter. Add more water if needed.

    Brush a 30 cm diameter baking tray with tahini paste and pour the batter in the tray. Flatten and smooth the top.

    Decorate with almond halves and bake for around 30 min until the top is golden in color.

    Leave aside to cool. Serve pieces cut into medium-sized squares.
