Auntie Gina’s Sausage and Peppers

Ingredients

  1. 1 bag misto alla griglia eggplant, zucchini, peppers frozen
  2. 6 cloves garlic
  3. 1/3 cup pine nuts
  4. 1 small bag of arugula
  5. 1 cup shaved Parmesan cheese
  6. 3 tbs olive oil

Cooking Instructions

  1. 1

    Sautee sausage with olive oil and garlic. Once sausage is cooked add pine nuts until lightly toasted.

    Microwave vegetables for eight minutes and add to cooked sausage.

  3. 3

    Add arugula and cook until wilted. Turn off heat. Add Parmesan.

  4. 4

    Serve as is or over pasta.
