This slightly fizzy refreshing jelly is good for summer. I used plane carbonated water and golden brown sugar so it turned out Champagne, but you can use your favourite soda. I found fresh berries and Israeli melon at veggie stand, so I used them this time. Enjoy the rest of summer with your favourites :)

Ingredients

120mins
4 servings
  1. 11/2 cups (360 ml) carbonated water
  2. 3 Tbsp water
  3. 1 pack (7 g) gelatine
  4. 2 Tbsp sugar
  5. 1 Tbsp stevia
  6. 1 Tbsp lemon juice
  7. fruits of your choice

Cooking Instructions

  1. 1

Pour the water into a microwavable bowl and sprinkle with gelatin. Let it absorb the water.

  2. 2

Place sugar, stevia and 2Tbsp carbonated water in a microwavable bowl.

  3. 3

Microwave gelatine mix 30 sec until melted.

  4. 4

Microwave sugar mixture 30 sec and whisk to disolve sugar.

  5. 5

Combine the rest of the carbonated water, lemon juice, gelatine mixture and sugar mixture. Pour it into a container and refrigerate.

  6. 6

When the jelly is done, spoon it into a glass and add some fruit. Then add more jelly, more fruit to make as many layers as you want. I like to cut fruit into small pieces and serve chilled!!
