Ingredients

2 (15 oz) cans cannellini beans rinsed and drained

1 cup chicken stock

1 1/2 cups shredded Monterey jack cheese

3/4 cup roasted red peppers roughly chopped

1/2 cup feta cheese crumbles

2 Tablespoons lemon juice

1/4 teaspoon salt

1 teaspoon oregano

1/8 teaspoon cayenne pepper
Cooking Instructions

In a medium saucepan heat beans and stock on medium heat until warmed through. Remove from heat and stir in Monterey jack cheese and roasted peppers

Place bean mixture in a food processor and blend till smooth adding in a little more stock if needed

Pour the mixture into a bowl and stir in feta, lemon juice, oregano, salt and cayenne pepper

Serve warm with chips and vegetables of choice
