I'm always trying new foods and end up tossing things together too see what they taste like. I get more failures due to too much spice than anything.
Two things I have found, though, is to make sure you like the favour of things you cook with, otherwise you'll hate the end result too, and DOCUMENT EVERYTHING YOU DO. If it turns out well, you'll remember how you did it later. If of doesn't turn out, you'll know what not to do next time.
Oh, and don't give up simply because it failed. You learned something, now go apply it and make it better. You don't learn from success.
