Chopped Rice/Fish Salad

As a model/casting agent and life coach I'm always exploring healthier and tasty ways to enjoy all food without compromising my BMI,salads are some of my experiments I spend time on in the kitchen.
Ingredients

half cup of cooked rice
-
Rocket/Watercress/Baby Spinach (roughly chopped)

Tomatoes(chopped)
-
Onions (chopped)
-
Mixed colour peppers (chopped)

Avocado (roughlychopped)
-
Pepper dews (roughly chopped)
Cooking Instructions

Salad Dressing: balsamic vinegar, olive oil, pepper dew pickle juice (and/or any preferred pickle juice), 1 spoon any plain yoghurt, salt, pepper, mustard powder & 1 tsp of honey...shake in tight sealed jar

Mix all chopped ingredients in salad bowl with rice

Season with homemade dressing, toss and serve (I find homemade dressings are guilt free because you know what's in it, because you put it together yourself)
