Oven-Baked Potato balls
I got an inspiration from a "Papas Rellenas- Stuffed Fried Mashed Potato" recipe to make this yummy snack. Crispy outside and soft inside. Have them with ketchup or not. Kids will love this dish!

Tip
* Serve it warm when the potato balls are still crispy.
* You can replace the ham with any other cooked meat. We have tried 100% beef bratwursts and the taste is great!
Ingredients

2 cups chilled mashed potato

5 slices ham, cut into small pieces

2 Tbsp shred carrots, chopped

2 green onion, chopped into small pieces

1 Tbsp mayonnaise (optional)

2 eggs

1 tsp salt or seasoning salt

1 cup Panco bread crumbs
Cooking Instructions

Preheat oven to 350°F and Prepare all the ingredients.

Mix everything together well then form potato balls by a spoon or an ice cream scoop.

Lay potato balls on a well sprayed baking sheet.

Gently whisk the eggs and season the breadcrumbs. Scoop 1 potato ball to egg wash then rolling around in breadcrumbs. Put it back to the baking sheet. Repeat this action until done.

Drip oil on every potato ball then sprinkles the remain of breadcrumbs on the baking sheet to cover dripped out egg liquid.

Baked 15-20 minutes or until golden brown. serve it warm. Enjoy~~ (The potato ball might stick on the sheet. Just scoop it up a little bit harder with a spatula.)
