Ingredients

  2. 1 Japanese sweet potato
  3. 1/2 tsp soy sauce
  4. 2 tbsp honey
  5. 2 1/2 tbsp water
  6. 1 tbsp sesame seeds
  7. 1/2 cup of neutral tasting oil such as canola or grapeseed

Cooking Instructions

    In a small skillet over medium heat, toast the sesame seeds by constantly shaking the pan or moving them about with a spatula. When they become fragrant and a few pop, remove and set aside.

    Peel the sweet potato and cut into bite size pieces and set aside.

    In a small bowl mix together the soy sauce, honey, water, and vinegar and set aside.

    In a medium skillet or wok, heat the oil on medium high heat. Add the sweet potatoes and fry them until they are golden brown. Remove and set aside.

    Let the wok or skillet cool down. Then, add the potatoes back in and add the sauce. Simmer for about 5 minutes or until the sauce thickens. Toss to coat.

    Sprinkle with sesame seeds and serve.

My daughter is a fan of her bento. I mostly make conbini sando and a quick cucumber pickle. I need some help with finding japanese sweet potato. One Asian market that we go to may have it but any advice would be appreciated.
