Red Lentil & Spinach Soup

  1. 1 cup lentils, red
  2. 1 tomato, small and roughly chopped
  3. 1 cup spinach, leaves, roughly chopped
  4. 1 small onion, finely chopped
  5. 1 clove garlic, finely chopped
  6. 2 tablespoons olive oil
  7. 1 teaspoon ground cumin
  8. 1/2 teaspoon turmeric ground
  9. 1 teaspoon salt

Cooking Instructions

    Heat the oil in a large pan on medium heat. Add the onion, stir fry for 5 min or until it becomes translucent.

    Add the garlic, cumin, turmeric, salt, lentils, and cook for one more min.

    Add the chopped tomato and stir well.

    Add 5 cups of water and bring to the boil. Turn down the heat and simmer, stirring occasionally for about 20 min, or until the lentils are tender.

    Use a blender to puree the soup.

    Stir in the spinach and cook for 5 more minutes. Serve warm.

I live in London where there are loads of amazing restaurants, but I still feel best after having cooked a lovely meal at home! Favorite things to cook: I love mushrooms and I love cheese! So dishes with these 2 ingredient will be a feast for me! I am almost 100% vegetarian which you might notice from my recipees...
