Paddu/Appe or Appam is so delicious and very easy to prepare. Paddu is a round fritter, where the batter is prepared from soaked, grind, and ferment rice and urad dal.  Appe is crispy from outside and soft from inside. Today , I stuffed appe with the Walnuts , paneer , cheese and spices. Nutty flavor of Walnuts make it delicious as well as more Healthy . Crunch of walnuts and softness of paneer and cheese create a perfect taste and texture.
Serve this delicious Paddu along with coconut chutney and green chutney .

Ingredients

  1. 1 cup idli rice or small grain rice
  2. 1/2 cup black lentils/urad daal
  3. 1/2 cup chopped vegetables of your choice...carrots, capsicum
  4. 1 inch ginger
  5. 2 green chilli
  6. 1 tsp salt or to taste
  7. 1 tsp eno
  8. For stuffing
  9. 100 g paneer grated
  10. 1-2 cheese cube grated
  11. 1/4 cup roasted chopped walnuts
  12. 1 tbsp chopped coriander leaves
  13. 1 tsp oregano
  14. 1/2 tsp chilli powder or to taste
  15. 1/4 tsp salt
  16. 2 tbsp oil or ghee to cook paddu

Cooking Instructions

    Wash and Soak rice and dal for overnight

  2. 2

    In morning drain rice and dal, grind it with ginger-garlic- chilli to make a fine paste.
    Add very little water while grinding. We need idli batter like consistency.

    For stuffing combine all the ingredients together and divided it into 30 equal portions. As shown in pictures..
    Keep it aside.

    Chopped all vegetables of your choice (I take onion, carrot, capsicum, tomatoes and coriander leaves). Mix them with prepared batter along with salt and eno. Mix everything well.

    Heat Appam pan, greased it with oil or ghee.

    Firstly, Fill 1/2tbsp batter In each pit of paddu patra. Then add walnut and cheese mixture, one portion in each. cover it with 1/2tbsp batter. keep the flame on low.

    Cover and cook for 2-3 minutes, Grease Paddu with oil or ghee, flip it and again cover and cook another side for 2 minutes.

    Stuffed Paddu is ready to serve.
    Serve hot with coconut chutney and spicy green chutney.
