Ingredients

20-30minutes
2 People
  1. 250 g shaped pasta
  2. 1 small onion
  3. 3 cloves garlic
  4. 1/2 tsp dried basil
  5. 1/4 tsp chilli flakes
  6. optional 125ml white wine
  7. 200 g Mascarpone
  8. 4-5 sun dried tomatoes in oil
  9. 200 g tenderstem broccoli
  10. 50 g finely grated Parmesan
  11. 1-2 tsp tomato puree
  12. 110 g hot smoked salmon (flakes)

Cooking Instructions

    Bring a large pan of salted water to the boil with 2 tbsp of olive oil.

    Finely dice onion, peel and chop garlic. Add to a preheated pan with 1tbsp of olive oil, chilli flakes and dried basil. Gently heat, sweating all the ingredients together.

    Add in white wine to onion mixture and gently reduce to 1/4 original volume. Blanch broccoli off for 2minutes, remove and refresh in cold water after.

    Add pasta to boiling water (cook as per packet instructions)

    Drain off and finely slice sun dried tomatoes. Slice broccoli stems into thirds. Finely grate Parmesan.

    Stir mascarpone, half the grated Parmesan, tomato purée into the onion mixture. Taste and season.

  7. 7

    Fold sauce through pasta with tomato and broccoli, roughly flake in most of the salmon to Combine.

    Serve garnished with remaining grated Parmesan, cracked black pepper, left over salmon flakes (more chilli flakes if you like) enjoy! ;)
