Classic Cucumber Tea Sandwich

Tea Party in England has Sandwich’s and the most common is Cucumber. It’s a Classic one and is popular all across England.
Ingredients

1 large cucumber

2 Tbsp cream cheese
-
1 tsp chives chopped fine
-
1 tsp lemon zest
-
as per taste Salt

2 slices White Bread ideally

As required Garnish with cream cheese and coriander leaves
Cooking Instructions

In the kitchen, top keep 2 slices of white bread ready.

Into the cream cheese add finely chopped chives and lemon zest. Mix very well.

Cut Cucumber into very thin slices. Ideally, English cucumber would be the best choice if not Indian long ones would do just fine. Set aside the thinly sliced cucumber

Spoon the cream cheese mix onto the bread and place the thinly sliced cucumber diagonally from one corner to the other, overlapping on each.

With clean hands press on the bread once done. So that the cucumber slices don’t slip while cutting the crusts. With a sharp bread knife cut the crusts carefully

Cut into quarters the bread with the cucumbers.

Plate and with piping bag take cream cheese and place on a corner of the bread. Garnish with coriander.
