Peel and cut potatoes into small cubes cook with salt and curry.

Chop the onions, chop the carrot

Add scotch bonnet, carrots, onions, cooked potatoes and seasonings.

Break eggs in a clean bowl

Then pour the potato mixture and cook both sides at medium heat until done
