🌽 Corn 🌽 & Paneer Croquettes
Ingredients

For the Stuffing : 👇

1/2 cup boiled & crushed corn

1 cup grated paneer

2 tsp oil
-
1 tsp cumin seeds
-
1 tsp garlic, finely chopped
-
1 tsp ginger - green chilli paste
-
1 tsp dry mango powder (amchur)

1 tsp garam masala
-
Salt to taste
-
2 tbsp processed cheese, grated

For the potato mixture : 👇

3 cups boiled & grated potatoes

1/ 2 cup bread crumbs
-
1/2 tsp black pepper powder
-
Salt to taste

Cooking Instructions

For the Stuffing : Heat oil in a non-stick pan. Add cumin seeds. When the seeds splutter add garlic, ginger- green chilli paste & saute for a minute. Add boiled & coarsely crushed corn.Mix very well so all the spices & corn are incorporated very well.

Add dried mango powder & garam masala. Cook for a minute. Switch off the gas. Add paneer & cheese.Mix well. Keep aside.

For the potato mixture : Combine everything in a deep bowl.Mix everything & keep aside.

Divide the stuffing into 10 equal portions.

Divide the potato mixture into 10 equal portions.

Take a portion of potato mixture & flatten it with your hands. Place a portion of the stuffing in the centre & bring the edges in the centre & seal the stuffing & roll it into an oval shape.

Repeat to make all Croquettes.

Heat oil in a pan & deep fry a few Croquettes at a time. Drain on kitchen paper.

Serve immediately with tomato ketchup.
