This is a more refined version of scalloped potatoes. It you like scalloped potatoes you will love potato pave as it adds a layer of texture that cannot be found in scalloped potatoes.Pave is a French word for "paving stones" and the names comes from the way the potatoes are stacked creating a beautiful layer of potatoes with cream, cheese, salt and pepper.

Ingredients

  1. 1 Cup Heavy Cream Whipping cream /
  2. 1 Teaspoon Salt
  3. 1 Teaspoon Pepper
  4. 3 Potatoes Large
  5. 1 Tablespoon Oil
  6. Chives (optional)

Cooking Instructions

    Put the cream into a bowl, add salt and pepper and whisk till well in-cooperated.

    Peel the potatoes. Trim all sides of each potato so that it is in the shape of a rectangle. Cut slices of each potato into equal pieces and add the slices into the cream mixture.

    Toss the potatoes in the mixture and set it aside.

    Line a loaf pan with parchment paper and line the dish with slices potatoes adding a layer of cheese in between for added flavor.

    Cover the pave with parchment paper and then bake in the oven at 350 for about 1 hour and 15 mins (or till the potatoes comes out soft when inserted with a toothpick.)

    Once done, cool the potatoes outside the oven for about 15 mins.

    Take a piece of cardboard and cover with aluminum foil. Place this on top of the pave and weigh it down with three cans of equal weight (tins of soup). Place in the fridge to cool and set for at least 5 hours.

    After 5 hours take out the pave and cut down the middle and then into equal squares.

    Heat some oil in a pan. Once heated, place the pave into the oil and let it crisp on the top and bottom only. Sprinkle with slice chives and serve!
