Kothu Chapathi
All of you will be familiar with the Kothu Parotta a tasty dish much popular in the Southern state of Tamilnadu.So how about trying a healthy version of this delicious recipe..Kothu Chapathi it tastes very much similiar to the one with parotta..
Ingredients

2 Chapathi Dough -for chapathis

1 tspn Ghee -

masala For

1 Onion big - sliced

1 Green chilli - chopped
-
1 tspn Ginger-garlic paste -

1 Carrot small - cut into small pieces

1/4 cup Cabbage - chopped

1/4 cup Capsicum - chopped
-
1 Potato small - cut into small pieces
-
1/4 tspn Turmeric powder -
-
1/2 tspn Red chilli powder -
-
1 tspn+1/4 tspn Garam Masala powder -

1 cup Soya Chunks - cooked and cut into small pieces
-
1 tspn Soy Sauce -
-
2 tspns Tomato sauce -
-
Curry leaves
-
1/2 tspn Ghee -
Cooking Instructions

Take small balls out of chapathi dough.Roll it to a small circle.Apply 1/2 tspn ghee on it and spread all over.Now fold it twice to form a triangle.Again roll in to a thin chapathi.Heat a pan and cook it on both sides.Then cut the cooked chapathi to small pieces.Keep aside.

Heat oil in a pan.Add sliced onion,saute till it becomes light brown.Now add ginger-garlic paste and green chilli.Saute till the raw smell goes.Now add in the chopped vegetables.Saute for few seconds.Add little salt,mix well.Cover and cook in low flame till the vegetables becomes soft.Now add in red chilli powder,turmeric powder and 1 tspn garam masala powder.Add soya chunks and curry leaves also.

Add little more salt if needed.Mix everything well,cover and cook in low flame for 5 mints.After 5 mints,add soy sauce,tomato sauce and chapathi pieces.Mix well.Again cover and let it sit in low flame for 2-3 more mints.Finally drizzle 1/2 tspn ghee and sprinkle 1/4 tspn garam masala on top.Give a quick mix and remove from fire.Enjoy hot.

Notes: Instead of soya chunks you can use cooked and shredded chicken or scrambled egg.
