This is a very easy crock pot recipe. It smells great when you walk in the door from work. The sofrito adds flavor to the recipe. If you like your food with some spice you can add chili powder and red pepper to taste.

Ingredients

10 hours
6 servings
  1. 1 tbsp Olive Oil
  2. 1 1/2 lb Flank Steak (cut in half)
  3. 1 large Onion (sliced 1/2 inch thick)
  4. 1 Green Pepper (sliced 1/2 inch thick)
  5. 1 Red Pepper (sliced 1/2 inch thick)
  6. 1 can Diced Tomatoes (28 oz)
  7. 1/4 cup Sofrito
  8. 3 tbsp Tomato Paste
  9. 2 clove Garlic (minced)
  10. 1 1/2 tsp Ground Cumin
  11. 1 tsp Dried Oregano
  12. 1/2 tsp Salt
  13. 2 cup Cooked rice.

Cooking Instructions

    In a 4 quart slow cooker mix ingredients for the sauce.

    Heat oil in large skillet over med-high heat.

    Brown steak well on both sides. About 5 minutes.

    Add onions, peppers and browned steak to the sauce. Be sure steak is covered with the sauce.

    Cook until meat is fork tender. 10 - 12 hours on low, 5-6 hours on high or 3 hours at simmer on the stove.

    Remove meat to plate. Shred with two forks. Return to pot and stir.

    Serve over rice.
