Bhature
Bhature is one kind of Indian bread (a kind of Puri) that forms the best pair with "chhole" or any kind of Indian spicy side dish, such as kashmiri dum aloo, paneer butter masala, etc.
Ingredients

500 gm maida(all purpose flour)

100 gm yogurt

1 teaspoon baking soda

1 tablespoon vegetable oil

100 gm semolina

1/2 teaspoon salt

as needed Vegetable oil for deep frying
Cooking Instructions

Mix all the ingredients (except the oil) very well.

Add some water little by little and knead it into a smooth and soft dough.

Mix the oil on the exposed part of the dough and rest it for 4 hours by covering it with a moist cloth.

After 4hours uncover it. You will observe that the size of the dough has risen up. Knead it for a while and make small balls out of it.

Flatten it with the help of rolling pin.

Heat some vegetable oil in a wok. Wait till it is smoking hot.

Deep fry each of the bhature and serve hot with chhole.
