Ropa Vieja is Spanish for old clothes. There is two dishes from Cuba that are considered the National Dish of Cuba. 1st is Arroz on Pollo, Chicken and Rice. The 2nd is Ropa Vieja, old clothes which is Shredded beef and Vegetables.

Ingredients

  1. 1-3/4 pound beef I used eye of round
  2. 1/2 pound carrots
  3. 1 teaspoon ground black pepper
  4. 1-1/2 teaspoon kosher salt
  5. 2 cup chopped celery
  6. 1 large onion
  7. 4 leaves bay leaf
  8. 1 teaspoon dried whole leaf oregano
  9. 2 cup beef broth
  10. 29 ounces crushed tomatoes
  11. 1 teaspoon ground cumin
  12. 1/2 cup sliced olives black or green

Cooking Instructions

    Brown the beef and preheat the oven to 370 degrees Fahrenheit. When browned set to the side to rest.

    Slice and chop all the vegetables. Julienne them. Add to the pot.

    Add the spices and tomatoes.

    Spices. Stir and mix well.

    Slice the beef and wiggle the pieces in. Add the bay leaves and Simmer then cover put into the oven.

    This has cooked 2-1/2 hours I pulled it out of the oven and then I shredded the beef, added the olives, and stirred it up well. I am letting it rest for 15 minutes. Then serve I hope you enjoy!!
