It was a nice simple recipe, thanks for sharing! I don't think I used enough flour though? Yours seemed a lot more solid in the picture.

it should resemble a firm dough, just keep adding flour and kneading until you get a good dough. Italians say you are supposed to use as little flour as possible, otherwise they are too heavy! You can't win!

Salt is used to bake the potatoes (to absorb moisture) and then mix some in with the mashed potatoes before adding flour (for taste)
