There are many different ways to cook Jollof Rice. It is a dish made with rice, tomatoes, tomato paste, onions, scotch bonnet, bell peppers aka tatashe, salt, and bay leaf and vegetable oil. If it doesn't have the above mentioned ingredients, then it's not true Jollof 😀. The perfect Nigeria Jollof is done over fire wood; where the smokey flavor is infused into the Rice.

Ingredients

  1. 1 cup Rice
  2. 1 tbsp Tomatoes paste
  3. 2 Fresh Tomatoes
  4. 3 onions
  5. 1/2 cup Veg Oil
  6. 1/2 tsp salt
  7. 1 stock cube
  8. Dash thyme

Cooking Instructions

    Pour warm or hot water over the rice and allow it soak for about 30minutes

    Wash and blend, tomatoes, tatashe, 2 onions, pepper, garlic and ginger, then par boil till water dries out

  3. 3

    Dice the remaining onion and set aside

  4. 4

    Heat up pot and add veg oil and then onions, sauté for about a minute then add tomatoes paste

  5. 5

    Add bay leaf to get the flavor infused into the oil; add the parboiled tomatoes paste Cooke for about 7 to 8 minutes stir in your salt and stock cube once the paste is cooked through

    Finally add your rice and water; turn to mix everything together and then cover pot with foil paper before closing the lid; reduce the flame at this pot and allow the low heat and steam to cook your rice

    Check once in while to make sure you don’t need extra water and taste so you can adjust the ingredients

    Remove from heat and serve with Gizdodo and Grilled Chicken
