Cucumber and Wasabi Brown Sushi Rolls
This is a basic vegan sushi roll recipe made with brown rice, cucumber and wasabi. Brown rice is not quite as sticky as the typically used white variety, but it has a lovely nutty taste and chewier texture - a delicious and healthy alternative! #mycookbook
Ingredients

1 cup brown rice

2 cups water

1 small cucumber - julienned

4 sheets Nori

1 splash sushi vinegar

1 splash Mirin

Pinch Wasabi

Sushi mat
Cooking Instructions

Wash the sushi rice. Add the rice and water to the pan and bring to the boil. Cover with a lid and simmer for 35 minutes or until the water has absorbed. Turn off the heat and leave to stand for a further 10 minutes.

Using a cutting motion add the mirin and vinegar to the rice.

Using the sushi mat, place a sheet of nori and cover with the rice (leaving a 1cm edge at the bottom)

Arrange your cucumber strips along the middle of the rice and add a pinch of wasabi. Pick up the end of the sushi mat nearest to you, roll and cut into equal portions with a sharp, wet knife.

Serve with pickled ginger or your favourite sushi condiments
