Ingredients

  1. 150 g frozen peas
  2. 1/2 onion
  3. 1 ripe avocado
  4. Chopped mint
  5. 2 tbsp lemon juice
  6. 1 tbsp olive oil
  7. Salt and pepper
  8. Crostini or you can use baguette (but you toast baguette rounds under the preheated grill)

Cooking Instructions

    Add peas to a pan of boiling water, bring back to the boil, simmer for 1min,drain and refresh in bowl of cold water.Drain again,then set aside 2tbsp of the peas.Blitz the rest in food-processor with onion,half the avocado,mint,lemon juice and olive oil to make a purée.after add the remaining avocado,mix to combine,then season to taste with salt and pepper, add more lemon juice if need be.

    Once baguette have cooled a little, spoon some of the smashed mixture onto each one and crumble over the feta and top with mint leaves. Drizzle with olive oil if you like and enjoy👌😋😉
