Warm apple cake with plenty of almond powder, perfect for the cold days. One of our favorite way to make use of the apples in season. Goes very well with vanilla ice cream too!

Ingredients

1 hr 30 min
6-8servings (20cm oval ovenproof dish)
  1. 4-5 apple
  2. 20 g butter (for the apples)
  3. 100 g almond powder
  4. 150 g sugar
  5. 3 eggs
  6. 1/4 teaspoon baking powder
  7. 130 g unsalted butter

Cooking Instructions

    Heat the oven to 180°C

  2. 2

    Peel, core the apples and cut into 12s

  3. 3

    Heat the butter in a pan and sauté the apples till mostly cooked(5-6min). Add granulated sugar and lightly caramelize the apples.

    Mix almond power, flour, baking powder and sugar well in a bowl using a whipper. Pour the eggs in in couple of goes mixing withs spatula each time.

    Heat the butter in a saucepan till lightly browned. Cool a bit then pour gradually in to the bowl of mixture. Mix well

    Pour half of the mixture into the oven dish and place the apples on top. Repeat with all of the remaining mixture and apples.

    Bake in the oven at 180°C for 45 minutes.

Can't wait for the apple season to come!! This reminds me the old classic taste of homemade cakes.
