It's been a long time since I've not uploaded a recipe. And today I'm not working also it's still on lockdown, plus the weather is raining and cold winter here in Australia. So I'm decided to spend time in the kitchen and making something for dinner tonight. And yes .... Finnaly I choose this menu for our dinner tonight..." Soto Ayam Kuah Bening" the one of the delicious Indonesian soup made with chicken and aromatic spices and herbs and the characterized by its clear soup without coconut milk like other type of soto.

Ingredients

  1. 1 medium size chicken, cut into 4 parts, wash thoroughly
  2. 3 tablespoon oil for sauted
  3. 1 tablespoons sugar
  4. 1 lemongrass stalk, bruised
  5. 1 cm ginger, bruised
  6. Ground Spices :
  7. 2 large red shallots
  8. 4 cloves garlic
  9. 1 cm turmeric
  10. Salt and sugar to taste
  11. Other Ingredient to serve :
  12. 100 grams vermicelli, soak until soft, drain
  13. 100 grams bean sprouts, soak in hot water, drain
  14. 2 boiled eggs, cut into pieces according to taste
  15. Fried shallots and Fried garlic to taste
  16. Sliced ​​spring onions and celery to taste
  17. Chillie Sambal and Lime juice to taste and extra rice

Cooking Instructions

  1. 1

    Boil chicken with 2,5 liters of water in a saucepan, until half cooked.

  2. 2

    Saute all the spices until fragrant and cooked.  Add it to the chicken broth.  Continue to cook until the chicken is cooked.  Remove the chicken, drain and deep fry then shred the chicken according to taste.

    Prepare a serving bowl then arrange the vermicelli, bean sprouts, eggs, in a bowl.

    Drizzle with chicken soup.  Sprinkle with spring onions, celery, fried shallots, and fried garlic.

    Serve while hot, with chili sambal and crackers and don't forget to add lime juice before enjoying.
