Chicken Udon/Soba

#CookpadLunch I like adding chicken thighs and onions or leeks to the soup. If you have the basic Japanese condiments; soy sauce, mirin, cooking sake, and dashi broth bag or powder, it's easy and quick to cook. @hurry once cooked this soba with chicken powder for us. That inspired me.

You can use either udon or soba for noodles. Soba is normally GF.

In Japan, adding a raw egg (pasteurized) to a noodle bowl is also very popular. It's called Tsuki-mi udon (soba) - "月見うどん(そば)". Tsuki means moon. Isn't it fancy?

Ingredients

  1. Noddle
  2. 2 Soba or Udon noodles (dried noodles are preferable)
  3. 150 g Chicken thigh
  4. 1/2 Onion or leek (optional - I used this for the main photo instead of spring onion toppings. Perhaps you don't need double onions? 😂)
  5. 800 ml Dashi broth (or water + dashi broth bag)
  6. 1/2 tbsp white sugar
  7. 4 tbsp Soy sauce
  8. 2 tbsp Mirin
  9. 2 tbsp Japanese cooking sake
  10. 1/2 tsp Chicken powder (optional)
  11. Toppings (optional)
  12. Thinly cut spring onions
  13. Eggs (pasteurized)

Cooking Instructions

    Prepare two pots; one for soup, the other for boiling noodles. Boil water in both pots and make dashi broth with one. You can use dashi powder or a dashi bag.

    Cut chicken thighs into bite size and slice a half onion (if you use)

  3. 3

    With the other pot, you will boil noodles, but it's better not to over-boil them. Coordinate the timing with the chicken cooked in the soup. Start boiling noodles.

    Pour soup's condiments first and check after heating a bit and adjust the taste as you like. If it's good, put the chicken (and sliced onions) into the soup with medium-high heat. Simmer them for 5-7 mins or until it's cooked.

    Drain noodles and put them in bowls first to serve. If you want to add "raw egg" topping, add raw egg, and then pour the soup over the egg so that it gets slightly cooked. Add spring onion toppings in the end if you have.

    This is another example of this recipe with soba. This didn’t use onions but used spring onions topping.
