Prawns & Avocado Salad with Wasabi Mayo
This is my favourite Prawn & Avocado Salad. The sauce is simple to make. Mix Japanese Mayonnaise with a little bit of Soy Sauce and Wasabi. I love the flavour of this sauce, however, my family members hate Wasabi. They prefer ‘Seafood Cocktail Sauce’. So, this salad is just for me.
Ingredients

200 g shelled small Prawns

Salt

1 Avocado *cut into small pieces

1 thin Spring Onion *finely chopped

2 tablespoons Japanese Mayonnaise

1/2-1 teaspoon Soy Sauce

1/2-1 teaspoon Wasabi
Cooking Instructions

Prawns should be cooked in salted water and cooled. Remove shell and clean them. You would need about 50g shelled small Prawns per serve.

Combine the Sauce ingredients in a bowl, add Prawns and Avocado, and gently mix to combine. Sprinkle with finely chopped Spring Onion on top and serve.
