This is my favourite Prawn & Avocado Salad. The sauce is simple to make. Mix Japanese Mayonnaise with a little bit of Soy Sauce and Wasabi. I love the flavour of this sauce, however, my family members hate Wasabi. They prefer ‘Seafood Cocktail Sauce’. So, this salad is just for me.

Ingredients

4 Servings
  1. 200 g shelled small Prawns
  2. Salt
  3. 1 Avocado *cut into small pieces
  4. 1 thin Spring Onion *finely chopped
  5. 2 tablespoons Japanese Mayonnaise
  6. 1/2-1 teaspoon Soy Sauce
  7. 1/2-1 teaspoon Wasabi

Cooking Instructions

  1. 1

    Prawns should be cooked in salted water and cooled. Remove shell and clean them. You would need about 50g shelled small Prawns per serve.

    Combine the Sauce ingredients in a bowl, add Prawns and Avocado, and gently mix to combine. Sprinkle with finely chopped Spring Onion on top and serve.
