Omu-Soba: Yakisoba Noodle Omelettes

I was wondering what to do with leftover yakisoba noodles.

At Step 2, make sure the egg will slide off the frying pan cleanly by lifting it with a spatula or shaking the frying pan.
You can make it with just one egg, but it will be a rather small portion.
Adjust the frying time for the omelette and the sauce to your taste. Recipe by Yuukarikoara

Ingredients

  1. 1 Leftover yakisoba noodles
  2. 1 to 2 Egg
  3. 1 dash Vegetable oil
  4. 1 optional Aonori

Cooking Instructions

    Heat oil in a frying pan. Add the beaten eggs and make the omelette base (I used 2 eggs).

    Mound the yakisoba noodles in the middle of the omelette (You can turn off the heat.)

  3. 3

    Hold a plate in your left hand and the frying pan handle in your right. Tilt the frying pan onto the plate (I couldn't take a photo as both hands were occupied!)

    Top the omelete with mayonnaise, ketchup and aonori to finish. When you cut it open the omelette looks like this.

    You can also just mound the yakisoba in the center of the plate and drape the omelette on top - easy!
