It's a rainy day here today and not so warm. I thought cook something warming and filling. I wanted to use the smoked sausage also I had a packet of cheese sauce mix so here it is.

Ingredients

15 minutes
2 servings
  1. 1 tbls olive oil
  2. 1 medium onion sliced chunky
  3. Make 300ml cheese sauce or just use a packet just add milk
  4. 1 tsp Smoked Cayenne pepper1 tbls olive oil
  5. 1 Slice the smoked sausage into thin slices
  6. 5 Medium Potatoes Wash and cut into small 1/4s of the potatoes leave skin
  7. 100 ml water
  8. 1-2 Cup Grated mild cheese

Cooking Instructions

    Add the olive oil to the deep frying pan heat up the oil then add the onions

  2. 2

    Add the potatoes to boiling water boil for 2 minutes then turn them low for about 10 minutes.

    Make the sauce mix. In a deep based frying pan, bring to the boil turn down low for 3 minutes. Then add the 100 ml boiling water and mix. Whisk.

    Add the cayenne pepper on the onion then fry for just 2 minutes. Next add the sliced smoked sausage cook for 2 minutes.

    When the potatoes are soft but firm drain and add them to the sausage mix. Cover the potatoes in the cheese sauce then bring to the boil. Add a lid and simmer for just 1 minute.

    Grate the cheese remove the lid then add the cheese all over the top of the casserole. Leave for a minute then serve with a little parsley sprinkled on top to garnish.

    You could also grill the casserole so as the Grated Cheese goes a little brown and a little crisp.
